Our first recipe features a traditional summer favorite: somen!
Usually somen is eaten chilled with dipping broth, but our friend Mikako Kohara came up with a unique Californian twist to enjoy this traditional Japanese noodle.
Creamy Somen with Tuna & Avocado
Ingredients (Serves 2)
2 bundles of somen
1 can of tuna
25g cream cheese
4 tablespoons soy milk
1 tablespoons lemon juice
A pinch of salt & pepper
1. Drain oil from tuna. Remove cream cheese from refrigerator to soften.
2. Bring a pot of water to a boil. Boil somen noodles for 4 minutes. In a bowl, mash together the avocado, tuna, cream cheese, lemon juice, salt, and pepper.
3. Drain boiling water and rinse noodles with cold water in a strainer. Shake strainer well to remove water.
4. Mix noodles into the mashed mixture.
