Harold Wilken, Janie’s Farm Organics Harold Wilken heads Janie’s Farm Organics, a family farm, in central Illinois which has been certified organic since 2005. The farm consists of 2300 acres of cropland raising corn, soybeans, wheat, oats, rye, popcorn, pumpkins, black beans and seed corn. Cover crops include red clover, crimson clover, radishes, Sunn hemp and small grains, which are grown in abundance. After long delays, mills are arriving and will soon be installed allowing Janie’s Farm to market flour straight to consumers, restaurants and bakeries. Harold believes the future is bright for organics and for new organic farmers. The farm is blessed with a team that works together very well.

Bernie Ehnes, Back 40 Organics Bernie Ehnes has been farming for 37 years, of which he began growing organically in 1990. His farm specializes in growing Red Fife, Emmer, Durum, and Rye wheat. Ehnes’ respect for the soil is very much in line with the Natural Agriculture perspective on building and maintaining healthy soil. As he stated, “If you don’t take care of the soil, the soil is not going to take care of you.” Emmer wheat is the second oldest ancestral wheat dating back 8000 years. In 2010, Ehnes began growing Natural Agricultural emmer wheat to make the first Shumei Natural Agriculture flour and in 2013, in collaboration with the Sfoglini Pasta Factory in Brooklyn, New York, the first Natural Agriculture fusilli pasta was created.
